In Spain, the 6th and the 8th of December are public holidays so this entire week was pretty strange. I worked on Monday, had a day off on Tuesday, worked on Wednesday and again had a day off on Thursday. Today I’m working again and then it’s weekend. If it were for me, I could work like this every week. I think everyone would be more productive if they worked less, and had more time for themselves and their families. Stress would be reduced and everyone would be happier…
I love December in Barcelona. The maximum temperature is around 15 degrees, the sky is cloudless and in the Sun you literally do not need a jacket. That’s why these two days off were important to me to recharge my batteries and spend a lot of time outside. This, of course, means that I had to prepare healthy bars and bring a few with me in order to enjoy them with a coffee to go in the sun. As I have already mentioned several times, I try to make only quick and easy recipes because I don’t want to spend too much time in the kitchen if I can spend it in the sun. Therefore, these date almond bars are perfect because you can make them in the evening after work, leave overnight in the fridge and in the morning you can pack them and carry as a snack, wherever you go.
RAW DATE ALMOND BARS WITH STRAWBERRIES AND CHOCOLATE CHUNKS
Ingredients:
- 1 cup almonds
- 1 cup dates
- 1 tablespoon coconut oil
- 2 tablespoons fresh chopped strawberries
- 1 tablespoon chocolate chunks
Directions:
- Put the dates into a food processor and process until you get a sticky ball.
- Separately, grind the almonds and mix them with the dates and continue processing until they are mixed well.
- Add coconut oil, strawberries and chocolate chunks and process one more time until everything is combined.
- Flaten the mixture inside a pan and leave the bars in the fridge.
*If you want thicker dough, you can add some oat flour or shredded coconut to the mixture. Start by adding 1/4 cup and than adjust the quantity depending on your taste.
