You will recognise true love immediately, in the first smile and the sparkle in his eyes. The true love will never look for excuses, you will recognise it by the strength it gives you to keep on moving. The true love will help you get through the most difficult times, standing by your side, holding your hand tight and keeping you from quitting. You will understand each other without a spoken word, when your eyes meet their look will tell you how they feel and their silence will speak more than hundred words. Your true love will always be there, ready to be silent if you need it, but also ready to jump, shout and sing of excitement when the time is right. Yes, the true love exists and don’t let anyone tell you different. It will come when you least expect it and you will recognise it immediately. It will be pure, sincere and special, ready to give you the most precious thing it has, its heart.
You already know I’m a romantic person and I always believed in true love, that force that keeps you from falling and gives you strength to keep on. I believe it is possible to have a sincere relationship, full of mutual understanding and that love becomes stronger with time. On the other side, I hate love out of compromise and people looking for a relationship because someone thinks it will be good for them. Nobody has the right to tell you what is good for you. Nobody. Always remember that.
Valentine’s day is almost here and all the sellers are trying to convince us they have the right gift for our loved ones, all shop windows are already decorated with pink and red hearts. Florists and chocolate shops are happy because they will sell a lot of flowers and sweets on this day. If you forget about the intention of marketing experts from big companies to earn millions on Valentine’s day and concentrate just on making your partner happy, this day can become very special. Even though I prefer making my partner happy every day than only once a year, I am ready to make something nice for him also on Valentine’s day just to see his smile.
Couple of days ago I made strawberry and chocolate cake but we ate it so quickly I didn’t even have time to make photos. So I decided to make something similar this time, just with a bit more of red colour and hearts. The result is a gorgeous cake you can both share after a romantic dinner and cheer with a champagne to many years of your love.

VEGAN STRAWBERRY CHEESECAKE FOR ALL THE PEOPLE IN LOVE
Crust:
Ingredients:
- 1 cup almonds
- 2 tablespoons agave syrup
- 2 teaspoons vanilla extract
- ¼ teaspoon Himalayan salt
- 1 tablespoon coconut oil
Instructions:
- In a food processor grind almonds until they are broken then add agave syrup, vanilla extract, salt and coconut oil.
- Grind a bit more until everything is mixed.
- Put the crust in a pan and press it with your hands.
- Leave it in the fridge until the cream is ready.
*The diameter of my pan is 16cm.
Cream:
Ingredients:
- 2 cups cashews, soaked in water for at least 2 hours
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon Himalayan salt
- 2 tablespoons lemon juice
- 1/4 cup melted coconut oil
- 125 gr chopped strawberries
Instructions:
- In a food processor grind the cashews until they turn into butter.
- Add honey and coconut oil and process a bit more.
- Add lemon juice, vanilla, salt and process about 10 seconds more until it becomes really creamy.
- Put the cream into a small recipient, add chopped strawberries and mix them with a spoon.
- Put the cream over the crust and put the cheesecake back in the fridge.
Strawberry jelly:
Ingredients:
- 125 gr strawberries,
- 1/4 cup water
- 1 tablespoon honey
- 1 teaspoon agar agar
Instructions:
- In a food processor process strawberries with water until you get some kind of a juice.
- Put it in a small pan and add honey and agar agar.
- Heat it and stir until agar agar is completely melted.
- Pour the jelly over the cheesecake and let it cool completely.
- Keep the cheesecake in the fridge. Keep in mind cashews start to dry after a while so you should eat it quickly.
*If you want, you can decorate the cheesecake with chopped strawberries, chocolate or raspberries.
