Creamy almond butter

So long awaited New Year has finally arrived. Some of us entered it with a lot of noise and broken glasses, wanting to make very clear they are ready for new challenges. Others were shy and whispered their hopes and desires to the New Year, fearing they could scare it away or offend it if said out loud.
Whether we want to admit it or not, New Year’s Eve represents a new hope to all of us, a chance to reset all the bad things that happened. It’s a chance for a fresh start and the opportunity to become better and more valuable person. Despite the fact there is absolutely no difference between December 31st and January 1st, this magical night transforms and changes us all. There is new excitement in the air that gives us energy to make our wishes come true. There are so many wishes we had for so many years, and  each year they get larger and larger and, as time passes, they seem harder or even impossible to make come true.

This year I wished for something different. It is true that, when we are over thirty, something switches on in our heads, and all those material things we always wanted are replaced by the wish for health, more time with our loved ones and to accept ourselves as we are. Yes, when we are thirty we to turn into boring people! Joking aside, on my wish list for this year is a wish to travel more, as well as the wish to eat healthier food and to run a marathon.
Considering my eating habits, I must say I eat pretty strange things and, unlike the majority of people, I don’t eat vegetables. But as I am almost 33, I became a boring person and started being a lot more attentive to what I eat. So now I found a thousand and one way to eat some of the vegetables I would never eat before, by putting carrots or zucchini into a cake, making cauliflower pizza crust or mixing spinach with almond butter in a smoothie.
Finally the time has come to share with you this recipe for almond butter, that perfection which for the last couple of months has been an important part of my life and the majority of my recipes. So go get the ingredients and let’s make it together!

CREAMY ALMOND BUTTER

Ingredients:

  • 1 cup almonds
  • 1 teaspoon coconut oil
  • 2 tablespoons coconut sugar

Instructions:

  1. Put the almonds into a food processor and then grind them until they start turning into butter.
  2. Add coconut sugar and coconut oil and continue grinding until coconut sugar breaks down completely and the paste turns into a creamy butter.

*If you need, add some more coconut oil for a creamier butter and adjust sugar according to your taste.
