Autumn has already begun but it is still very warm here, almost like at the beginning of June. September is, in my opinion, the best month in Barcelona. Weather is still great but there is no heat like in July or August so you can still go to the beach, or, if you don’t like swimming so much, enjoy riding a bike or running. The best thing about Barcelona is that the sky is clear during most of the time so you’ll literally want to spend all your time outside which can have its drawbacks, because you will not be in a mood to go to work and spend the day in a dark office.
This year, after such a long time, I have been able to enjoy the whole summer, to visit the city and its tourist attractions again and again, with all the friends who stayed at my place this summer (I have to admit that every time I visit the city with somebody, I get a strange feeling and still can’t believe this is the city where I have been living for the last 5 years).
So, this summer I have been able to get up later with no hurries nor a single worry in the world and enjoy my coffee and breakfast. There is nothing better than that half an hour of tranquility and peace in the morning while I’m drinking my coffee and playing with my dog. Breakfast is a bit different because Tofi, my Maltese, keeps staring at my bowl making me so uncomfortable and feeling guilty because I’m eating and she’s not. Not that she would ever eat a bowl of overnight oats…
I just love overnight oats. I think there’s no easier breakfast to prepare. It is so creamy and tasty and you can make so many variations depending on the ingredients you add. You literally need 5 minutes to measure the ingredients, mix them and put them in the fridge. If you don’t have a half an hour in the morning to prepare and enjoy breakfast, overnight oats are perfect for you as you prepare everything the night before. Maybe the best thing about it is that you can eat it cold, straight from the fridge or you can heat it up and eat it in the winter as well. OVERNIGHT OATS WITH BANANA, CHIA SEED AND WALNUTS
Prep time: 5 minutes
Serves: 2
Ingredients:
- 1 cup rolled oats
- 1 ripe banana
- 2 tablespoons chia seeds
- 1 cup chopped walnuts
- 1 ½ cups coconut or almond milk
Directions:
- In an airtight container mash the banana with a fork.
- Add rolled oats, chia seeds and walnuts.
- Add milk and stir.
- Close it and shake it well.
- Place in the fridge overnight.
