Italian Tiramisu, so creamy and irresistible
- 1 cup cashews
- ⅓ cup honey (adjust to taste)
- 1 egg
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda
- ⅛ teaspoon Himalayan salt
- 2 cups cashews (soaked in water for about 2 hours)
- ¼ cup maple syrup
- ¼ cup espresso
- 1 teaspoon vanilla extract
- ¼ teaspoon Himalayan salt
- ¼ cup melted coconut oil
- Heat the oven to 170 C.
- First put cashews into a food processor and make a butter. Put this butter into a bowl and add the rest of the ingredients and mix well.
- Put the dough onto a baking pan and bake about 10-12 minutes until it's golden. Let the dough cool completely.
- Put cashews into a food processor and blend until they turn into butter.
- Add maple syrup and coffee and blend a bit more.
- Add vanilla extract, salt and coconut oil and blend until you get a creamy texture.
- If you want it to be creamier add more water or coffee, if you want stronger coffee taste.
- When the cream is ready, break the dough and put soak it into espresso coffee. You will need about 1 cup of coffee.
- Put one layer of dough and one layer of cream on top and another layer of dough and cream on top.
- Top with cocoa.
